Shepherd's pie with sweet potatoes. Hearty, comfort food at its finest. As a child, shepherd's pie was one of my favorites. But now, having cut white potatoes out of our diet, I experimented with sweet potatoes in this dish for two.

Shepherd's pie filled with ground turkey sautéed with mixed vegetables, sliced mushrooms and fresh herbs with a savory garlic sweet potato topping. Ingredients of Shepherd's pie with sweet potatoes

  1. You need of Vegetables.
  2. It's 1 of onion.
  3. It's 1 1/2 cup of celery.
  4. You need 1 cup of fennel.

  6. Prepare 1 small of zucchini.
  7. It's 1 packages of mushrooms.

  9. You need 1 lb of ground beef.

  13. You need 2 medium of sweet potatoes, mashed.

Wrap them in aluminum foil and bake until tender, about an hour. For the mashed sweet potatoes: Scoop sweet potato flesh into a large bowl and mash with a fork or potato masher.   1. Preheat oven to 350.

  4. Season the meat mixture to taste.
  5. Blend the sweet potatoes until smooth.

  7. Once the meat mixture is cooked to add the vegetables plus one 6 ounce can tomato paste to it.
  8. Cover until heated through then transfer to a cake pan.
  9. Bake uncovered in a 350°F oven for about 20 minutes then use the broiler to brown the top.
  10. Let sit for about 5 minutes so the goodness congeals together.

My kids absolutely love sweet potatoes and will eat them any way I fix them, so this is a good way to add in the extra veggies. I love this healthier take on shepherd's pie with a creamy sweet potato topping. This is a family favorite at our house and my kids love helping make the layers. Meanwhile, peel the sweet potatoes and cut into chunks. Don't over-boil sweet potatoes as they can become very wet when mashed.
